About Diane

Diane holds a Master of Science Degree in Holistic Nutrition from Hawthorn University.

Her passionate interest in nutrition has been a common thread throughout her adult life.  Diane began her career as a special education teacher, teaching in inner-city schools in Houston, Texas.  She later held teaching positions in Marysville, Washington, Tampa, Florida, and Portland, Oregon.  During her years in public education, she realized first-hand the important connection between nutrition and physical and emotional well-being, especially in children, and actively worked to increase nutrition awareness within her circle of influence.

After retiring from teaching, she started her own whole-foods catering business, Soup du Jour.  Developing a full menu of all natural, made-from-scratch soup recipes perfect for the Portland climate, she had a loyal clientele who employed her to cater a wide variety of functions.  She also provided home-delivery of frozen soup to senior citizens, shut-ins, new moms and soup-lovers throughout the metropolitan area.  After being diagnosed with breast cancer in 2001, Diane made the decision to put Soup du Jour on the back burner while she focused her attention and energy on treatment and recovery.

During her hiatus, she experienced a new realization of the importance of food and nutrition in recovery from illness, and made the decision to pursue a Master’s degree in holistic nutrition at Hawthorn University.  After graduating with high honors, she created Eat for Health to provide holistic nutrition counseling to people of all ages, particularly those with health challenges, including breast cancer.  Her business is based in Portland, Oregon, and she regularly provides phone consultations for clients across the United States.

Diane lives in Portland with her husband, John.  They have two grown children who were raised to be adventurous eaters, participating in kitchen activities from a young age.  Her son and daughter continue the family traditions as they enjoy gourmet whole-foods cooking, organic gardening, and raising backyard chickens with their spouses in Eugene, Oregon, and Washington D.C.
